Kerrie ei (curry egg) in Suriname

In Suriname we can all agree on one thing and that is: Kerrie ei (curry eggs) these are one of the most delicious local foods here. It doesn't matter from what descent you are, but "kerrie ei" is a known dish.  Curry eggs can be eaten with bread or with rice or just as a delicacy.  Almost every cafeteria in Suriname, whether big or small has curry eggs on their menu with white bread. It's common here that curry eggs are eaten with bread on the road (outside of your home) and at home you eat it with white rice and some vegetables as a side. Some people prefer eating them without sides, but it all depends on what you like.  Depending on your own preferences people prepare curry eggs with curry (duh! otherwise why would they call it curry eggs!), tomatoes or tomato sauce, pepper, union, garlic, black/white pepper, some chicken cubes, salt and other spices. If you prefer a thick sauce with your eggs you put in some potatoes while cooking the eggs with the curry. First you boil the eggs until well-done. You let the eggs cool down and then you peel the eggs, sometimes people fry them in a little bit oil so they get an brownish color (it depends on how you want to eat your curry eggs - see pics on your right). When you're done with the frying oil is added to a saucepan and all the ingredients including the curry  (if you're not adding fresh tomatoes, you add the tomato paste when baking your spices) are added and fried for a while, until everything is a bit brown. After this you add some water for the sauce an let everything cook until it boils. When the sauce starts boiling you add the peeled eggs and the fresh tomatoes (optional), let it cook for a 5-10 minutes and you're done. If you want potatoes (cut in slices) in it, then you cook them first with all the ingredients and water until they are fully cooked.  When you're potatoes are done then you add the eggs and fresh tomatoes to the mix. You let it cook for a while (max 10 minutes) and your done with you're curry eggs!

We (me) love curry eggs, so at least once a week we do have curry eggs on our menu. One thing that's very important for curry eggs is the curry powder! There are a lot of brands and variations of curry and depending on your own favorite you're curry eggs can taste different then someone else's. 

It's simple too cook, and super delicious!
